Just to clarify the previous answer. Surface color will only do a gradual coloring, not discrete. However, you can approximate the discrete coloring with somewhat more effort, by putting the same color at the top and bottom of each range, for example:
You can also try using a finer triangulation on that surface cap although that will increase the computational load for moving the clipping plane and rendering the colors.
