In protein world, it is general to collect CBCA(CO)NH and HNCACB to facilitate backbone assignment, and some other experiments can be collected, however, you need to have 13C,15N double-labeled sample which is expensive to make. For small peptides and nucleic acids, COSY, TOCSY and NOESY are generally used experiments. Regardless of L- or D-form amino acids, the way you assign the spectra is the same. The difference arises at the moment when you actually calculate the structure because calculation software should know the right sequence.
